Our Perfect Vancouver Day: Mount Pleasant Edition 

When Josh and I talk about a “perfect day,” it’s never about packing in as much as possible. It’s about moving at the right pace, choosing places we love, and spending time together as a family in a neighbourhood that feels like home. It’s nothing extravagant—just good food, familiar places, and time together. For us, that’s a perfect Vancouver day.

We usually start with coffee and pastries from Purebread. It’s familiar, comforting, and always a good idea. From there, we head to the Vancouver Seawall for a walk. The water, the fresh air, and the space to slow down instantly set the tone for the day.

Late morning is for wandering. We love popping into furniture shops and vintage stores, even when we’re not buying. It’s where ideas sneak in. Somewhere along the way, we’ll duck into Neptune Records or Red Cat Records. Flipping through records feels nostalgic and grounding, and it’s one of those small moments that stay with you.

Lunch is almost always at Burgoo. Cozy, unfussy, and exactly what we want in the middle of the day. Afterward, if timing works, I’ll sneak off for a quick reset at Formula Fig. The 30-minute facial makes it effortless and easy to fit into a full day.

Before heading home, we grab a few essentials at Welk’s General Store, then stop by Mercato di Luigi for pizza dough and a few Italian staples. These stops are small but important. They set the evening up nicely.

We always finish with a stop at Yum Sweet Shop, so the kids are covered for movie night. And if the stars align and we’re kid-free for the evening, Josh and I will finish the day with a cocktail at The Watson.

Josh’s Chicken Marinade

We often use this quick and dependable chicken marinade recipe for a delicious chicken dish that always turns out perfectly. Feel free to serve it with your favourite side dishes for a complete meal.

It was such a pleasure creating and sharing this marinade recipe with you! The kids even joined in, which was a lot of fun. We often use this quick and dependable recipe for a delicious chicken dish that always turns out perfectly. Feel free to serve it with your favourite side dishes for a complete meal.


INGREDIENTS:

  • ½ cup olive oil

  • 2 tablespoons brown sugar

  • 3 tablespoons soy sauce

  • 1 ½ teaspoons lemon zest and squeeze half that lemon

  • 1 tablespoon fresh parsley, chopped (dried parsley works too if you don't have fresh, and feel free to add more for garnish)

  • 1 teaspoon salt

  • ½ teaspoon pepper

  • 2 teaspoons minced garlic

  • 2 pounds chicken thighs

  • Don't forget the most important ingredient: LOVE

INSTRUCTIONS:

1. In a large bowl, mix together all the marinade ingredients with a whisk until well combined

2. Add the chicken thighs to the bowl, making sure they are fully coated in the marinade

3. Cover the bowl and place it in the refrigerator. Marinate for at least one hour, or up to 24 hours

4. Remove the chicken from the marinade before cooking using your preferred method


HERE ARE A FEW TIPS FOR JOSH’S PERFECT MARINADE:

  • The marinade can be made up to three days in advance. If the olive oil solidifies in the refrigerator, just let it sit at room temperature for about 20 minutes.

  • Boneless, skinless chicken thighs are quite versatile and can be grilled, sautéed, or baked. If you're using bone-in chicken thighs, baking in the oven is recommended for more even cooking due to the longer cook time.

  • This marinade is also delicious with other cuts of chicken like boneless skinless breasts, chicken tenders, or drumsticks.

  • Since this marinade contains sugar, which can burn easily on the grill, be sure to use medium or indirect heat when grilling.

REGARDING COOKING TIME

  • Boneless, skinless chicken thighs usually take about 6-7 minutes per side on the grill or stovetop, or 20-25 minutes when baked at 400°F.

  • Bone-in, skin-on chicken thighs will take approximately 45 minutes to bake at 400°F.

  • Always ensure the internal temperature of the chicken reaches 165°F for food safety by using a meat thermometer.

Our Favourite Spicy Spritzer Recipe 

Hello friends! Patio season is well underway, so we thought we’d share one of our favourite cocktail recipes. If you know us, you know we love rosé and jalapeño—we grow jalapeños in our garden every year! This is a refreshing easy spritzer recipe that’s always a home run. The best part is, with or without the added spice, it tastes great!

Hello friends! Patio season is well underway, so we thought we’d share one of our favourite cocktail recipes. If you know us, you know we love rosé and jalapeño—we grow jalapeños in our garden every year! This is a refreshing easy spritzer recipe that’s always a home run. The best part is, with or without the added spice, it tastes great! 


If you like extra spice, you can always muddle more jalapeño in the bottom of your glass before you add the rest of the ingredients. For a more mild bevvy, add fewer slices here or skip the muddling altogether. You can also make a carafe of these ahead of time for a party and wait to add the sparkling water right before serving.


Ingredients

  • 1-2 jalapeños, thinly sliced

  • 1 - 750ml bottle of dry rosé, chilled 

  • 8 lime wedges

  • 1 - 16oz bottle of sparkling water

  • scoop of ice


Preparation

Muddle some jalapeño slices in the glass for extra spice (optional).

Add ice to each glass.

Pour 3 ounces of rosé into each glass, add a squeeze of lime and top it off with a splash of sparkling water

Garnish with 2-3 jalapeño slices.

Caution: They go down fast so be prepared to enjoy a couple ;)
